What is Twin Town?

Twin Town Coffee Cooperative is a shared roasting facility in St. Paul designed to support independent coffee professionals and emerging roasting businesses.

  • The space provides access to professional roasting equipment, production space, and shared resources that lower the barrier to starting and growing a roasting operation.

  • Members can roast, develop their craft, and build their brands without the major capital investment of owning and operating their own facility.

  • The cooperative aims to foster a collaborative environment where coffee professionals grow sustainable businesses while strengthening the local coffee community.

Twin Town Coffee Cooperative is equipped with professional roasting and packaging equipment designed to support small and growing coffee brands.

  • The space includes a Mill City Roasters MCR-15 (15kg) production roaster for larger roasting runs and a Toper 5kg roaster ideal for smaller batches, profile development, and test roasts.

  • Members also have access to essential production tools including a weigh-and-fill machine, scales, bag sealers, a commercial grinder and label printers.

  • Together, this equipment provides a complete setup for roasting, dialing in coffee, and preparing finished bags for retail or wholesale.

Cupping Lab and Green Storage

Twin Town Coffee Cooperative includes a dedicated cupping and evaluation space where members can taste, analyze, and refine their coffees.

  • The lab is equipped with everything needed to run professional cuppings, including an Ikawa 50g sample roaster, Mahlkönig EK43 grinder, cupping bowls, scales, and timers.

  • The space is designed to support sample roasting, quality control, and profile development, helping members dial in coffees before moving to production roasting.

  • Green Coffee Storage: Members also have access to secure green coffee storage within the facility, making it easy to keep inventory on-site and streamline the roasting workflow.

Connections

Great coffee is built through relationships. Our goal is to connect roasters with one another—and with the broader coffee community, from importers and producers to educators and industry professionals. We foster these connections through shared cuppings, farmer and importer visits, and community events that bring people together around coffee. By sharing knowledge, sourcing opportunities, and experience, members can strengthen their craft, discover new coffees, and grow together.

Membership at Twin Town Coffee Cooperative is designed to be flexible and accessible for growing coffee businesses. Members pay based on production, with roasting starting at $1.50 per pound roasted, allowing roasters to scale their costs as their businesses grow.

  • Membership includes access to the cooperative’s full suite of equipment, including production and sample roasters, packaging tools, and quality control equipment.

  • Members also have use of the dedicated cupping lab for sample roasting and coffee evaluation, as well as on-site green coffee storage to keep inventory close at hand.

  • This structure allows independent roasters to operate professionally without the significant capital investment required to build and maintain their own roasting facility.
